- 1 cup Raisins
- 1/2 cups Dried Currants
- 1/2 cups Dates, Chopped
- 1 cup Brewed, Hot Black Tea
- 1- 1/2 Tablespoon Ground Chia Seeds Mixed With Below Amount Of Water To Make Chia egg
- 1 Tablespoon Water
- 1 cup Cashew Meal/flour
- 1 cup Almond Meal/flour
- 1 Tablespoon Baking Powder
- 1 pinch Sea Salt
- 5 Tablespoons Coconut Sugar, Divided
- 1 Dropper-full NuNaturals Liquid Vanilla Stevia
Directions

1Put the dried fruit into a bowl.

2Pour the hot tea over the dried fruit and let it sit for about an hour.

3Preheat your oven to 325 F. Make the chia egg by combining the ground chia seeds and water in a small bowl so it can sit and congeal for a few minutes.

4In a mixing bowl, combine the flours, baking powder, salt, and 4 tablespoons of the coconut sugar.

5Stir in the dried fruit with any extra liquid, the chia egg, and stevia until well combined.

6Pour into a glass pie plate that has been lined on the bottom with a parchment paper circle and smooth the dough out.

7Bake for about 40 minutes.

8(When done, the edges should be nicely browned and a toothpick inserted in the middle should come out clean, although it might still look a little soft.

9That is just particular to almond flour which sets up as it cools.)

10Sprinkle with the remaining coconut sugar as soon as it comes out of the oven.

11Cool before slicing into wedges and serving.

15If you arent sensitive to eggs, feel free to replace the chia egg with a real one.
