- 8 pieces of chicken
- 3 Tbsp. salad oil
- 4 green peppers
- 2 onions
- 1 can peaches, sliced
- 1/4 c. vinegar
- 2 Tbsp. soy sauce
- 3 Tbsp. brown sugar
- 2 Tbsp. cornstarch
- 2 tomatoes, cut into wedges
Directions

1Brown chicken in skillet in salad oil.

2Remove chicken to bowl. In drippings, cook onions, green peppers, cut into strips.

3Add peach liquid from can to skillet, stir in vinegar, soy sauce, brown sugar, salt and pepper and 1/4 cup water.

4Heat to boiling, reduce heat to low.

5Add chicken.

6Simmer 30 minutes.

7In cup, mix cornstarch and 4 tablespoons water into simmering chicken liquid. Add peaches and tomatoes and heat.

8Serve over rice.
