Fruited Moroccan Chicken

- 1 tablespoon salt-free Moroccan seasoning
- 1 pound chicken breast tenders
- Cooking spray
- 1 teaspoon olive oil
- 16 dried apricot halves
- 1/2 cup reduced-fat sour cream (do not use fat-free sour cream)
Directions

1Sprinkle seasoning evenly over chicken. Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add chicken; cook 3 minutes on each side or until chicken is lightly browned.

2While chicken cooks, cut apricot halves into slivers. Place in a glass measure; add water to cover. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 2 minutes; drain well.

3Remove chicken from heat; stir in apricots and sour cream. Serve immediately.
