- 1 c. Quaker oats (quick or old fashioned), uncooked
- 1 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. cinnamon
- 1 c. skim milk
- 1/2 c. mashed ripe banana (about large)
- 1/2 c. raisins, apricots, dates or prunes
- 1/4 c. vegetable oil
- 1/4 c. firmly packed brown sugar
- 1 egg white
Directions

1Heat oven to 400°.

2Line 12 muffin cups with paper baking cups. Combine oats, flour, baking powder and cinnamon. Add combined remaining ingredients.

3Mix just until dry ingredients are moistened.

4Fill prepared muffin cups 3/4 full.

5Bake 20 to 25 minutes or until golden brown. Makes 1 dozen muffins.
