Ingredients
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons powdered milk
- 2 teaspoons salt, plus more for seasoning after frying
- 5 tablespoons cold vegetable shortening
- 1 12 cups water
- 2 cups canola oil, for frying
Directions

1Combine flour, baking powder, milk powder, and salt in a large bowl.

2Cut the shortening in until the mixture is crumbly.

3Add the water and mix until the dough comes together.

4Place on a lightly floured surface and knead lightly until smooth.

5Cover with a dishcloth and let sit at room temperature for 1 hour.

6Heat the oil in a large high-sided saute pan until it reaches 350 degrees F.

7Divide the dough into 8 pieces and roll each piece out into a 4-inch circle.

8Fry the bread in the hot oil until golden brown on both sides.

9Remove to a sheet pan lined with paper towels and season with salt.
