- 1 c. flat beer
- 1 Tbsp. salt
- 2 tsp. baking powder
- 1 1/2 tsp. sugar
- 1 c. flour
- 1/8 tsp. cayenne
- 1 to 1 1/4 lb. peeled, deveined large or medium shrimp
- vegetable oil (for deep frying)
- flour (in a shaker)
Directions

1Open the beer and pour off into a bowl 2 hours before mixing the batter.

2Leave uncovered at room temperature.

3To prepare the batter, combine all the ingredients in a large mixing bowl and whip at medium-high speed with an electric mixer until frothy and rather thin in texture.

4(Or whip vigorously by hand with a whisk, for about 4 minutes.)

5Cover the bowl with a plastic wrap and let stand at room temperature for at least 3 hours.
