Ingredients

  • 1/2 c. butter
  • 1 c. white sugar
  • 1 c. chopped dates
  • 2 eggs
  • 2 c. Rice Krispies
  • 1 pinch of salt
  • 1/4 c. red and green cherries, chopped
  • 1/4 c. nuts, chopped
  • 1/2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 3 oz. shredded coconut

Directions

    Heat electric frypan to 220°. Melt butter in pan; add dates and salt. Beat eggs and sugar and add to pan. Cook until thick, stirring constantly.

    Cool, then add fruit and nuts. Stir in Rice Krispies and flavoring. Form 1 1/2-inch balls and roll in coconut or extra chopped nuts. Store in refrigerator. Will keep up to 1 month.
