  • 2 pints Semi-Skimmed Milk
  • 2 pints Double Cream
  • 4 lb Demerara Sugar
  • 6 oz Unsalted Butter
  • 2 lb Icing Sugar

Directions

    Mix the milk, cream, sugar and butter together in a large pot
  2. 2
    Boil it all to 114'c/237'f, continuously stirring from 90'c/194'f
  3. 3
    At 114'c/237'f, remove from heat and beat in icing sugar and cool for a few minutes
  4. 4
    Pour into a greased tray and let it set in fridge
