Ingredients

  • 1 1/3 c. flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 2 Tbsp. sugar
  • 1 egg
  • 2/3 c. milk
  • 1/4 tsp. vanilla
  • cooking oil
  • powdered sugar

Directions

    Sift together flour, salt, baking soda, baking powder and sugar; set aside.

    Beat eggs; blend in milk and vanilla.

    Add to dry ingredients and beat until smooth.

    In a large frying pan or iron skillet, pour enough oil to cover the bottom by 1/2 inch. Heat to just short of smoking, 365°.

    Carefully pour batter into a small funnel while holding finger to bottom.

    Drop batter in oil by releasing finger.

    Sprinkle with powdered sugar.
