- Oil for frying
- 2 eggs
- 1 1/3 c. milk
- 1/4 c. sugar
- 2 1/2 c. self-rising flour
- powdered sugar for sprinkling over top
Directions

1Pour oil into electric skillet to about 1/2 to 1 inch deep. Heat to 375 degrees.

2Combine the eggs and milk in a mixing bowl. Beat until blended. Add sugar and flour.

3Beat until smooth. Cover the bottom of the funnel with your finger.

4Pour about 1/4 to 1/3 cup of the batter into funnel.

5Hold the funnel over the skillet. Remove your finger and release the batter in a spiral motion.

6Fry until golden brown on one side.

7Carefully turn the funnel cake over and brown the other side.

8Remove from oil and drain well on paper towels.

9Sprinkle generously with powdered sugar.

10Repeat with remaining batter.

11Serve warm.
