- vegetable oil
- 1 1/3 c. milk
- 2 1/2 c. self-rising flour
- 2 eggs
- 1/4 c. sugar
- confectioners sugar
Directions

1Heat oil (two inches deep) to 375° in skillet.

2Beat remaining ingredients (except confectioners sugar) until smooth.

3Holding forefinger over tip of 1/2-inch diameter funnel pour about 1/2 cup batter, controlling flow with finger, into hot oil, swirling it in circles from the center out.

4Fry until light brown and then turn over and fry the other side.

5Drain and keep warm.

6Sprinkle with confectioners sugar.

7Do not keep tightly covered or cakes will become soggy.

8Makes approximately 6 cakes.
