  • 2 Tablespoons Olive Oil
  • 6 cloves Garlic, Minced
  • 1 whole Yellow Onion, Diced
  • 1 whole Red Bell Pepper, chopped
  • 1 whole Jalapeno Pepper, Diced
  • 2 cups Cooked Rice
  • 2 teaspoons Cumin
  • 1 can (15 Oz. Size) Red Kidney Beans
  • 1 cup Red Wine
  • 1 whole Bay Leaf
  • 1 Tablespoon Worcestershire Sauce
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoons Salt, Or To Taste
  • 1/2 teaspoons Pepper Or To Taste
  • 2 Tablespoons Chopped Fresh Cilantro
  • 1 whole Lime, To Serve

Directions

    Add the oil and garlic to a large deep pan or saucepan and heat it on medium-heat until the garlic starts sizzling.

    Add the onion and peppers and saute until the onions are softened.

    Add the rice to the onions and fry for 10 minutes, stirring continuously so the rice doesnt stick to the pan.

    Add the cumin, beans, red wine, bay leaf, Worcestershire sauce, and paprika.

    Season with salt and pepper to taste.

    Cook, stirring occasionally, until the wine is absorbed.

    Serve topped with fresh chopped cilantro and a squeeze of lime.
