"Garbage Can" Enchiladas

  • 1 whole chicken, cut
  • 1 can mushroom soup
  • 1 can diced green chilies
  • 1 large can enchilada sauce
  • 1 whole onion, diced
  • 1 block cheese (any kind)
  • 1 pkg. corn tortillas
  • 1 can diced black olives (optional)

Directions

    Cut whole chicken in small pieces, already cooked.

    Crock-pot is easiest.

    Grate cheese.

    Combine enchilada sauce, mushroom soup, green chilies, onion and black olives in large bowl.

    Cook tortillas in oil, then roll with all ingredients.

    Be sure to save a little cheese and sauce for top of enchiladas.

    After all are rolled and put in a pan, put leftover cheese and sauce on top. Bake at 350° in oven just until the cheese has melted.

    Also, you could substitute chicken for other meats.
