- 1 bell pepper, chopped
- 3 Tbsp. butter
- 1 clove garlic, minced
- 1 medium onion, chopped
- 2 c. sliced squash
- 2 c. fresh corn, cut from cob
- 2 tomatoes, peeled and diced
- 1 tsp. salt
- 1 tsp. seasoning salt
- pepper to taste
- pinch of sugar
- 1/3 c. water
Directions

1In large skillet, melt butter and saute onion, pepper and garlic until soft.

2Add squash; cook briefly before stirring in tomatoes, corn and seasonings.

3Pour into buttered 3-quart casserole dish and add water.

4Bake covered at 350° for 1 hour.
