  • 1 packages penne rigate pasta, cooked
  • 1/2 cup long beans, cut into 1inch pieces
  • 2 medium pimento peppers, seeded and sliced
  • 1 medium carrot, stripped and cut into 1 inch pieces
  • 1/2 cup sliced broccoli floretts
  • 1/4 cup sliced cauliflower floretts
  • 1/3 cup corn
  • 1 medium onion, sliced
  • 1/4 cup bacon, cooked and broken into bite size pieces( optional)
  • 3 clove garlic, chopped
  • 1/2 tbsp ginger, chopped
  • 2 tbsp celery, chopped
  • 1 tsp salt or to taste
  • 1/2 tbsp Italian seasoning
  • 1 1/2 tbsp oil
  • 1/4 cup vegetable stock/water, or as needed

Directions

    heat oil in large skillet.

    add onion, ginger, garlic, broccoli, carrots, long beans, cauliflower, peppers and salt.

    cook 1min, add stock/ water, reduce heat, cover and cook for 1min more

    mix in the corn and bacon then fold pasta into vege mixture.

    sprinkle with Italian seasoning, adjust taste and turn off heat.

    serve with your favorite pasta sauce or have as a salad
