- 2 c. boiling water
- 3/4 c. tomato, chopped
- 1/2 c. green onion, chopped
- 1/2 c. fresh parsley, finely chopped
- 1/2 c. cilantro, finely chopped
- 2 Tbsp. lemon juice
- 1 Tbsp. vinegar
- 1 1/2 tsp. oil
- 1/8 tsp. pepper
Directions

1In a medium bowl, soak bulgur in hot water for 1 hour; drain well.

2Add tomato, cucumber, green onion, parsley and cilantro. Toss together and chill.
