  • 12 cup fresh basil leaf
  • 1 garlic clove, crushed
  • 2 cups vinegar (5% acidity)
  • fresh basil sprig
  • garlic clove, whole

Directions

    Slightly bruise basil, and place in a wide mouth glass jar with garlic.

    Place vinegar in medium saucepan, bring to a boil.

    Pour vinegar over basil and garlic;cover with lid.

    Let stand at room temp 2 weeks.

    Strain vinegar into decorative jars or bottles, discarding basil and garlic residue;add additional sprigs of basil, and whole garlic cloves if desired.

    Seal with a cork or other airtight lid.
