- 12 cup fresh basil leaf
- 1 garlic clove, crushed
- 2 cups vinegar (5% acidity)

Directions

1Slightly bruise basil, and place in a wide mouth glass jar with garlic.

2Place vinegar in medium saucepan, bring to a boil.

3Pour vinegar over basil and garlic;cover with lid.

4Let stand at room temp 2 weeks.

5Strain vinegar into decorative jars or bottles, discarding basil and garlic residue;add additional sprigs of basil, and whole garlic cloves if desired.

6Seal with a cork or other airtight lid.
