- 1 stick unsalted butter
- 3 Tbsp. vegetable oil
- 3 lb. chicken, cut up into 8 serving pieces, patted dry on paper toweling
- salt and freshly ground pepper to taste
- 7 garlic cloves, minced
- 1/4 c. finely chopped parsley leaves
- 1/4 c. dry white vermouth
- 1 c. good chicken broth
- juice of 2 small lemons
- 2 to 3 Tbsp. finely chopped parsley leaves for garnish
- lemon wedges for garnish
Directions

1Heat 3 tablespoons butter and the oil in a large skillet.

2A few at a time, brown the chicken pieces well in the hot fat; remove them to a side dish as they are browned and season with salt and pepper.

3Pour out the fat from the skillet; let the pan cool for 5 minutes.
