  • 1 tablespoon mirin (Japanese rice wine, optional; see headnote)
  • 1 teaspoon low-sodium soy sauce, plus more to taste
  • 1 tablespoon thinly sliced shiso leaves (see headnote; may substitute scallions)
  • 1 tablespoon thinly sliced nori (see headnote)
