Garlic Frittata

Ingredients
- 8 eggs
- 1/2 c. milk
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. butter
- 4 cloves fresh garlic, minced
- 1/2 c. chopped onion
- 1 to 4 oz. Polish sausage or garlic sausage, chopped
- 4 large potatoes, shredded
- 4 oz. Cheddar cheese, shredded
Directions

1Beat together eggs, milk and Parmesan cheese; set aside.

2In large skillet over medium-high heat, melt butter and saute garlic, onion, sausage and potatoes for about 5 minutes or until tender. Reduce heat to medium.

3Pour egg mixture into pan and cook, without stirring, until eggs are almost set.

4Sprinkle Cheddar cheese over top of frittata.

5Let cook on top of stove for about 1 more minute.

6Place pan under broiler and broil about 6 inches from heat until top is bubbly and slightly browned.

7Cut in wedges to serve.
