- 1 lb. Russet or Yukon Gold potatoes, peeled and cut into 1-inch pieces
- 1 c. water
- 3/4 c. chicken broth
- 2 garlic cloves (more or less, depending on your taste)
- salt and pepper
- regular olive oil or the kind flavored with basil (about 1 Tbsp.)
Directions

1Boil potatoes and garlic in water and chicken broth, uncovered, until potatoes are tender and almost all liquid is absorbed, about 15 minutes.

2Mash the contents; add salt and pepper to your taste and olive oil.
