  • 4 lg. heads of garlic
  • 10 oz. (about 1 3/4 cup) peeled garlic cloves.
  • 2 cups olive oil.
  • 1 tsp. salt
  • 1/2 cup fresh lime juice

Directions

    Preheat oven to 325 Break the heads of garlic apart and peel.

    Mash the cloves with the side of a kitchen knife.

    Just mash slightly.

    Stir together the garlic and the olive oil in a 8x8- inch pan.

    Make sure the garlic is submerged.

    Put the pan in the oven for 45-55 minutes.

    Until the garlic is lightly brown.

    Add the lime juice and bake for 20 minutes for the garlic to absorb the lime juice.

    Remove from the oven and let cool for about 10 minutes.

    Using a hand held potato masher or a large fork mash the garlic into a coarse puree.

    Pour the mixture into wide mouth storage containers.

    You can keep refrigerated for up to 3 months.
