- 4 c. rinsed pinto beans, soaked overnight
- 1 chopped onion
- 1 chopped clove garlic
- 1/2 tsp. chili powder
Directions

1Drain beans.

2Cover with water.

3Add remaining ingredients. Simmer until very tender, stirring occasionally and adding water if needed.

4It should be thick and soupy.

5Add salt to taste. Blend with hand blender until fairly smooth, still with some whole beans.

6Cook to thicken if necessary.

7Refrigerate or freeze.
