  • 1 (1.25 lb.) pkg. refrigerated mashed potatoes (2 2/3 c.)
  • 1 c. sour cream
  • 1/3 c. grated Parmesan cheese
  • 2 large cloves garlic, finely chopped
  • 20 frozen potato wedges with skins
  • 2 Tbsp. grated Parmesan cheese
  • chopped fresh chives (if desired)

    Heat oven to 400°.

    Spray 9 x 1 1/2-inch quiche dish with nonstick spray.

    Mix mashed potatoes, sour cream, 1/3 cup cheese and garlic in quiche dish; spread evenly.

    Arrange potato wedges in spoke fashion with 2 wedges in center of mixture.

    Sprinkle with 2 tablespoons cheese.

    Bake 25 to 30 minutes.

    Sprinkle with chives.
