- 1 1/2 lb. red potatoes
- 1 garlic clove
- 1/2 c. low-fat milk
- 1 tsp. salt
- 1 Tbsp. chopped parsley
Directions

1About 30 minutes before serving, cut unpeeled potatoes into 1 1/2-inch chunks.

2Peel garlic clove and cut lengthwise in half. In 3-quart saucepan over high heat, heat potatoes, garlic and enough water to cover to boiling.

4low. Cover and simmer 10 minutes or until potatoes are very tender.

5Drain. Return potatoes and garlic to saucepan. With potato masher, mash potatoes and garlic with milk and salt until smooth.

6Stir in chopped parsley.
