- 2 large eggplants, peeled and cut into 1/2-inch slices
- 1/4 c. cooking oil
- 2 lb. ground beef or lamb
- 1 c. chopped onion
- 1 minced garlic
- 1 (8 oz.) can tomato sauce
- 3/4 c. red wine (optional)
- 2 Tbsp. parsley
- 1/4 tsp. oregano
- 1/4 tsp. cinnamon
- 1 beaten egg
- 1/4 c. butter or margarine
- 2 c. milk
- 3 beaten eggs
- 1/2 c. Parmesan cheese
Directions

1Brush eggplant slices with oil and sprinkle with salt.

2In a large skillet, brown eggplant.

3Drain and set aside.

4In same skillet, cook meat, onion and garlic until meat is brown; drain. Stir in tomato sauce, wine (if used), parsley, oregano, the 1/4 teaspoon cinnamon and 1 teaspoon salt.

5Simmer for 1 minute. Gradually stir into the beaten egg.
