  • 2 lbs red potatoes, cut into bite-sized pieces
  • 14 cup olive oil
  • 12 cup lemon juice
  • 2 teaspoons dried oregano
  • 4 garlic cloves, minced
  • salt and pepper, to taste

Directions

    Preheat the oven to 450 degrees F Put all ingredients in a zip bag and shake to coat the potatoes.

    Pour into a baking dish coated with cooking spray, keeping to one layer, and roast in the oven for about 1 hour, or until lightly golden.
