Garlic Scape Pesto

- 1/2 cups Garlic Scapes
- 1/2 whole Lemon, Juiced
- 1/2 cups Olive Oil
- 1-1/2 cup Shredded Parmesan Cheese
Directions

1Start off with rough chopping your garlic scapes. They do not need to be perfect, just small enough to measure out 1/2 cup and to process.

2Place into the food processor and add the lemon juice. Process for a few minutes until the garlic scapes are nicely chopped. You may need to scrape down the sides of your food processor a few times during the process.

3With the lid on your food processor, add your olive oil through the feed hole. Process another 2 minutes until well combined.

4Next add half of the Parmesan cheese. Process for 2 minutes and then add the other half and process for another 2 minutes.

5Toss the pesto in your favorite pasta, or use as a dip.
