Garlic Scape Pesto

  • 1/2 cups Garlic Scapes
  • 1/2 whole Lemon, Juiced
  • 1/2 cups Olive Oil
  • 1-1/2 cup Shredded Parmesan Cheese

Directions

    Start off with rough chopping your garlic scapes. They do not need to be perfect, just small enough to measure out 1/2 cup and to process.

    Place into the food processor and add the lemon juice. Process for a few minutes until the garlic scapes are nicely chopped. You may need to scrape down the sides of your food processor a few times during the process.

    With the lid on your food processor, add your olive oil through the feed hole. Process another 2 minutes until well combined.

    Next add half of the Parmesan cheese. Process for 2 minutes and then add the other half and process for another 2 minutes.

    Toss the pesto in your favorite pasta, or use as a dip.
