Garlic Shrimp Pots

Ingredients

  • 3/4 cup olive oil
  • 6 tbsp (3/4 stick) butter, quartered
  • 8 cloves garlic, finely chopped
  • 2 small red chili peppers, seeded and finely chopped
  • 24 None medium shrimp, peeled and deveined, leaving tails intact
  • 1 tbsp chopped parsley
  • None None Sea salt and pepper, to season
  • None None Lemon wedges, to serve
  • None None Baguette, to serve

Directions

    Preheat the oven to 425°F.

    Divide oil, butter, garlic and chili peppers among 4 small ovenproof ramekins. Place on a baking pan.

    Bake 10 mins. Place 6 shrimp in each ramekin. Bake for a further 6-8 mins or until shrimp are just cooked through.

    To serve, sprinkle with parsley, salt and pepper. Serve with lemon wedges and fresh baguette.
