Garlic Smashed Potatoes

- 2 lb russet potatoes, peeled, cubed
- 6 cloves garlic, unpeeled
- 1 tbsp olive oil
- 1/4 cup butter
- 1/4 cup heavy cream, warmed
- 1/4 cup chicken broth, warmed
- None None fresh chives, snipped, for garnish
Directions

1Place potatoes in a large saucepan. Cover with water then bring to a boil. Reduce heat to medium and simmer for 8 mins, or until tender. Drain. Return potatoes to saucepan.

2Meanwhile, in a small frying pan, cook garlic cloves over medium heat for 5 mins, or until lightly golden and tender. Let cool for 1 min then peel. Add to potatoes along with butter, heavy cream and chicken broth and mash until smooth. Season. Garnish with chives.
