Garlic String Beans

Ingredients

  • 1/4 c. olive oil
  • 2 tsp. minced garlic
  • 2 qt. string beans, cut in 2-inch pieces
  • 1 tsp. thyme, dried
  • 1 tsp. sea salt
  • black pepper to taste
  • 1 qt. water
  • 4 cubes bouillon (vegetable or beef)
  • squeeze of fresh lemon

Directions

    In large heavy saucepan, heat oil, garlic and beans.

    Saute over high heat to sear beans, stirring frequently so they do not burn.

    Add thyme, sea salt and pepper to taste.

    Add water to bouillon.

    Bring to boil; cover tightly.

    Reduce heat to medium and simmer for 20 to 30 minutes or until tender.

    Add more water when necessary.

    Add squeeze of lemon juice and toss well.
