Garlic Thai Chicken

  • 3 tablespoons soy sauce
  • 1 1/2 teaspoons garlic minced
  • 2 teaspoons sesame oil
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon ground coriander
  • 12 ounces chicken breast halves boned and skinless
  • 8 green onions
  • 1 1/2 cups rice or couscous

Directions

    Combine: soy sauce, garlic, sesame oil, coriander and red pepper.

    Set aside.

    Cut chicken into 1 inch chunks and add to soy sauce mixture.

    Toss lightly to coat, set aside.

    Cook rice or couscous according to package directions.

    Cut onions into 1 1/2 inch pieces.

    Spray cold wok or skillet with nonstick spray.

    Preheat wok or skillet over high heat.

    Add undrained chicken mixture to hot wok/skillet.

    Stir fry for 2 minutes, add onions.

    Continue to stir fry chicken and onions for 2 to 3 minutes more or until chicken is no longer pink and onions are tender.
