Garlicky Green Rice

- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 1 tsp. garlic, minced and peeled
- 1 c. uncooked rice
- 1 3/4 c. water
- 1 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. fresh parsley, chopped
Directions

1In heavy 2-quart pan, melt butter with oil over moderate heat. Add garlic and cook 1 minute, being careful garlic does not brown. Add rice and cook about 2 minutes, stirring often until shiny and hot.

2Stir in water, salt, pepper and 1/2 cup of the parsley and bring to a boil.

3Cover pot; reduce heat to moderately low and cook 20 to 25 minutes until rice is tender and has absorbed water. Fluff rice gently with a fork and stir in remaining parsley.

4Makes 4 servings.
