Garlicky Mashed Potatoes

  • 4 large Russet potatoes
  • 4 cloves garlic
  • 4 Tbsp. olive oil
  • pinch of rosemary
  • salt and pepper to taste

Directions

    Fill a 3-quart pan half full with water and bring to a boil. Peel potatoes, if desired.

    Put potatoes, garlic and rosemary in water; return to a boil and cook until potatoes are tender, about 20 minutes.

    Drain well, reserving 1/2 cup of cooking liquid.
