  • 2 Tablespoons Minced Fresh Parsley
  • 2 Tablespoons Olive Oil
  • 2 cloves Minced Garlic
  • 1 teaspoon Salt
  • 1/2 teaspoons Fresh Ground Pepper
  • 2 pounds Winter Squash, Peeled And Cubed
  • 1/3 cups Shaved Parmesan

Directions

    In a large bowl combine parsley, oil, garlic, salt and pepper. Add squash and toss to coat. Transfer to an ungreased shallow baking dish. Bake at 400 degrees for 50-55 minutes, until squash is very tender. Top with Parmesan.
