- 2 cloves garlic
- 2 lb. medium tomatoes, peeled and chopped
- 1 medium cucumber, chunked
- 1 large green pepper, seeded and chopped
- 2 slices white bread, trimmed and crumbled
- 1/4 c. red wine vinegar
- 2 c. tomato juice
- 1 c. water
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper

Directions

1Combine garlic, tomatoes, cuke, green pepper, bread and vinegar in blender until smooth.

2Strain mixture through sieve; toss solids out.

3Add tomato juice, water, oil, salt and pepper to liquid.

4Chill well.

5Garnish with croutons.
