Ingredients

  • 2 cloves garlic
  • 2 lb. medium tomatoes, peeled and chopped
  • 1 medium cucumber, chunked
  • 1 large green pepper, seeded and chopped
  • 2 slices white bread, trimmed and crumbled
  • 1/4 c. red wine vinegar
  • 2 c. tomato juice
  • 1 c. water
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • croutons

Directions

    Combine garlic, tomatoes, cuke, green pepper, bread and vinegar in blender until smooth.

    Strain mixture through sieve; toss solids out.

    Add tomato juice, water, oil, salt and pepper to liquid.

    Chill well.

    Garnish with croutons.
