Ingredients

  • 1 tomato
  • 1/2 cucumber
  • 1/2 onion
  • 1/4 green pepper
  • 1 c. V-8 juice
  • 2 1/2 c. V-8 juice
  • 1/4 c. olive oil
  • 1/3 c. wine vinegar
  • 1/4 tsp. Tabasco

Directions

    Put tomato, cucumber, onion, green pepper and 1 cup V-8 juice in blender and puree at high speed.

    Mix pureed vegetables and 2 1/2 cups V-8 juice, olive oil, wine vinegar and Tabasco.

    Chill at least 2 hours.

    Serve topped with croutons.
