  • 3 Carrots, peeled
  • 4 Celery Stalks
  • 1/4 Red Onion, medium
  • 2 cloves Garlic
  • 1/2 Cucumber, peeled & seeded
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 2 Tablespoons Cilantro leaves
  • 4 cups Tomato Juice, NOT V8
  • Red Wine Vinegar
  • Fresh Lime Juice
  • Honey
  • EVOO
  • Salt
  • Cayenne

Directions

    Place carrots, celery, onion, garlic, 1/2 peeled cucumber, bell peppers, cilantro and 1 cup tomato juice in food processor. Puree until smooth. In a large bowl, combine vegetable puree & remaining tomato juice. Season to taste with vinegar, lime juice, honey, evoo, salt & cayenne. Chill for at least 30 minutes. Optional garnish: small diced cucumber, pepper, avocado, cooked shrimp, crab, sour cream
