Ingredients

  • 3 tomatoes medium red, peeled, chopped, plus extra to serve
  • 1 red pepper seeded, chopped, plus extra to serve
  • 1 persian cucumber peeled, chopped, plus extra to serve
  • 1 red onion small, chopped, plus extra to serve
  • 1 clove garlic sliced
  • 1/4 baguette crust removed, torn into pieces
  • 1/4 cup extra-virgin olive oil plus extra to serve
  • 1/2 tablespoon white wine vinegar
  • 1/2 teaspoon chili minced
  • 1/4 teaspoon sugar

Directions

    In a large bowl, combine vegetables and garlic. Add bread, olive oil, vinegar, chili and sugar. Cover with 1/2 cup water. Season. Cover with plastic wrap and chill for at least 3 hours.

    Transfer mixture to a food processor or blender along with 3.5 oz ice cubes and process until smooth. Strain then pour into serving glasses.

    Serve topped with a little tomato, pepper, onion and mini croutons.
