- 3 tomatoes
- 1 large cucumber
- 1 1/2 green bell peppers
- 1 small onion
- 1 slice bread (about 3/4 c. torn pieces)
- 1/2 tsp. minced garlic
- 3 c. tomato juice
- 2 Tbsp. red wine vinegar
- 1 Tbsp. olive oil
- salt and pepper
Directions

1Core and seed the tomatoes.

2Peel and seed the cucumber.

3Stem and seed the peppers.

4Dice enough of the tomatoes, cucumber and peppers to make 6 tablespoons of each for garnish.

5Cut the remainder, along with the onion, into chunks.

6Tear bread into pieces.

7Combine batches of the vegetable chunks, bread and the remaining 6 ingredients in a blender or food processor; process until almost smooth.

8Pour into a bowl.

9Cover; refrigerate about 1 hour.

10Garnish each bowl with diced tomato, cucumber and green pepper.
