- 1/2 c. milk
- 1/2 c. buttermilk
- 1 large egg
- 2 Tbsp. vegetable oil
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. corn meal
- 1/2 c. flour
- 2 Tbsp. diced red peppers or pimento
- 2 Tbsp. minced jalapeno
- 2 Tbsp. whole kernel corn
Directions

1Heat oven to 425°. Generously grease 8-inch cast-iron skillet. In medium bowl, whisk together milk, buttermilk, egg, oil, sugar, baking powder and salt until blended. Add corn meal and flour (which has been mixed). Mix until dry ingredients are moistened. Add red peppers, jalapeno and corn. Pour in skillet. Bake 20 to 25 minutes or until light golden brown. Makes 6 servings.
