Ingredients

  • 1 large can diced tomatoes
  • 3 cucumbers, peeled, chopped and seeded
  • 1 medium red onion, chopped
  • 1 bell pepper, chopped
  • 1 yellow or red pepper, chopped
  • 1 can pitted black olives, chopped
  • Juice of two lemons
  • 1/4 - 1/2 c. olive oil
  • 1 Tbsp. worcestershire sauce
  • 1 - 2 cloves garlic, chopped
  • 4 Tbsp. chopped parsley
  • 1 c. ice cubes
  • Salt and pepper

Directions

    Mix all ingredients.

    Start out with 1/4 c. olive oil, then add more if needed.

    Salt and pepper to taste.

    Add enough ice cubes so that when they melt the soup is not too watery.
