  • 1 c. oil
  • 1 1/2 c. sugar
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. chopped nuts (walnuts or pecans)
  • 4 c. chopped and peeled apples

    Beat eggs; add oil.

    Add sugar slowly, then flour, mixed with dry ingredients.

    Bake at 350° for about 1 hour in 13 x 9-inch pan.
