Ingredients: 3 c. all-purpose flour; 3 tsp. baking powder; 1 tsp. salt; 4 eggs; 2 c. sugar; 1 c. vegetable oil; 1/2 c. orange juice; 2 1/2 tsp. vanilla extract; 4 c. thinly sliced, peeled apples (about 4 to 5 apples); 2 tsp. ground cinnamon; 3 Tbsp. sugar; confectioners sugar (optional)

1 tsp. salt
4 eggs
2 c. sugar
1 c. vegetable oil
1/2 c. orange juice
2 1/2 tsp. vanilla extract
4 c. thinly sliced, peeled apples (about 4 to 5 apples)

Directions

Combine the first 3 ingredients; set aside.

In a large mixing bowl, beat eggs and sugar.

Combine oil and orange juice and add alternately with dry ingredients to egg/sugar mixture.

Mix until smooth; add vanilla and beat well.

Pour half of the batter into a greased and floured tube pan.
