German Bean Soup

  • 1 lb. navy beans
  • shank ham bone with meat
  • 2 c. tomato sauce (16 oz.)
  • 2 Tbsp. minced parsley
  • 1/2 c. diced potatoes
  • 1/2 c. chopped onion
  • 2 c. diced celery
  • salt and pepper to taste

Directions

    Cover beans with water and soak overnight.

    Drain, rinse and cover with fresh water.

    Add the ham bone and simmer until beans are soft.

    Skim off fat.

    Add remaining ingredients.

    Cook until vegetables are almost soft.

    Remove ham bone and return picked meat to soup.
