Ingredients

  • 1 lb. precooked navy beans (dried or canned navy beans may be used)
  • 2 c. cooked and diced potatoes (to thicken)
  • 1 medium onion, diced 1-inch
  • 2 stalks celery, diced 1-inch
  • 2 carrots julienne, small diced
  • 1 lb. neck bones, beef or pork
  • 5 pods garlic, crushed
  • 2 c. sour cream (lo-fat)
  • pepper to taste (before or after cooking)

Directions

    Cook bones until meat falls off, for 2 hours, using low heat to simmer.

    Add vegetables.

    If using canned beans, add near end of cooking stage.

    Add pepper to taste (before or after cooking). Serve with cornbread.

    Serves 4 to 6.
