German Onion Pie

- 14 lb bacon, diced (about 4 slices)
- 2 cups chopped yellow onions
- 2 eggs, well beaten
- 1 cup sour cream
- 1 tablespoon flour
- 12 teaspoon salt
- 14 teaspoon black pepper
- 9 inches pie shells, unbaked
Directions

1Preheat the oven to 400.

2Saute the bacon until just clear.

3Drain most of the fat from the pan.

4Add the onions and saute until they are clear.

5Do not brown them.

6Set aside to cool.

7Beat the eggs and sour cream together in a medium bowl.

8Sprinkle flour over the top and bet inches Stir in salt and pepper.

9Prick the bottom of the pie shell several times with a fork.

10Spread the onions and bacon over the dough in the pie pan.

11Pour the sour cream mixture over the top.

12Bake for 15 minutes.

13Reduce heat to 350 and bake for another 15 minutes or until the pie is nicely browned.

14Serve hot.
