Ingredients
- 1 1/2 to 2 lb. bacon
- 3 1/2 lb. potatoes, cooked and diced (7 c.)
- 1 1/2 c. onion
- 1/4 c. flour
- 1/4 c. sugar
- 1 1/2 c. water
- 1/4 c. vinegar
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. light cream
Directions

1In large skillet, cook bacon until crisp.

2Drain, reserving 3 tablespoons drippings.

3Crumble bacon.

4In large bowl, toss bacon with the potatoes and onions; set aside.

5In drippings, combine flour and sugar.

6Combine water, vinegar, salt and pepper.

7Stir into skillet.

8Cook and stir until thickened and bubbly.

9Stir in cream.

10Pour over potato mixture.

11Toss gently to coat.
