- new potatoes
- red onions
- 1/4 gal. light salad oil
- 2 c. vinegar (use champagne vinegar or white wine)
- 2 eggs
- salt and pepper to taste
- 1/8 c. sugar
- 1 1/2 oz. fresh basil
Directions

1Slice potatoes 3/16-inch thick.

2Place in large utility dish and cover with plastic wrap; microwave until done.

3Slice red onions in rings.

4Mix slowly the salad oil and vinegar in mixer, then add beaten eggs.

5Next comes the sugar, salt and pepper and finally the basil.

6Place onions on top of potatoes.

7Pour sauce over top.
