- 1/3 to 1/2 c. olive oil
- 6 medium potatoes, peeled and quartered
- 6 to 8 bay leaves, finely crumbled
- 1 tsp. dried thyme
- 2 tsp. dried rosemary
- 1 head unpeeled garlic cloves, separated
- salt and pepper
Directions

1Preheat oven to 375°.

2Thoroughly oil a 9 x 13-inch shallow baking dish.

3Put olive oil in a small bowl and dip each piece of potato.

4Place in baking dish and sprinkle with herbs.

5Add at least 3 whole unpeeled garlic cloves for each whole potato. Drizzle remaining oil over all.

6Bake for 45 minutes.

7Salt and pepper to taste.
